Meat the Butcher
The Butcher’s History
Bill's experience with meat processing started in 1987. In high school, he began working in the meat room at TOPS which inspired him to seek experience outside his job. This eventually lead Bill to process his first deer. By 1993, Bill left for New York City to serve as a law enforcement officer until returning to Angelica after five years. It was at this time he officiated his independent butchery practice but exclusively during deer season. By 2000, Bill had expanded his skill set to other livestock for both local friends and farmers. In 2013, Bill transitioned into cutting full-time. Bill’s Custom Cut’s and Smokehouse has been growing ever since.. and in more ways than one.
 
“Now I have one daughter and four grandchildren that love helping make sausages and bacon. They each raise their own hogs.” 

 
An Avid Teacher
Bill’s other passions involve giving back to the community for which he serves. Since 1994, he has volunteered his time serving as a teaching advisor and local judge. 
 
“I have taught farmers whole hog butchery for 5 years in Virginia and Pennsylvania. I’ve taught smoking bacon, ham classes, sausage making in my whole hog class, and to children from my local 4 hour community. I love teaching and will soon be offering classes in my new facility.” 

 
Locally Supported
It’s safe to say their smoked products are out of this world delicious. Every year, Bill has won several local bacon and sausage competitions.
